Is it better to use bread flour or add gluten to other types of flour when using a bread machine?

I’m using Fleischmann’s bread machine yeast. Also, I’m open to advice on bread flour or gluten brands. Please provide explanation for your answer. Mary P, lol… there are lots of ideas here. If I get one dish done, that will be an accomplishment.

Thanks everyone for your answers.

I use regular, unbleached all-purpose flour for any bread. I usually use quick rising packaged yeast when I’m using my breadmaker. The best bread I make is from an old recipe not meant for a bread maker. Since my problem is achy hands when I knead the bread, I start it in the breadmaker using a dough setting. When it is finished I punch it down, put it in two baking pans, let it rise again, and bake it in the oven. Perfect!

How am I supposed to eat gluten free?

Ok so apparently I’m supposed to eat gluten free foods due to a condition. Like, that pretty much rules out most food lol. Seriously, if you look on the ingredients most food contains some amount of wheat. I know that they offer gluten free bread and stuff like that, but I live in a semi-rural area with no stores that sell that kind of food. Anyone else with the same problem?

I have gluten allergies and it’s actually easier than you’d think. If you have a Whole Foods nearby you’ll be all set. Just look for cookies or bread that is gluten free. Stop eating condensed soup. There are gluten free pastas such as corn, brown rice, quinoa (my personal favorite), you’re lucky if you only have gluten issues. I can’t have eggs, dairy, gluten or yeast. I wish I only had gluten issues! LOL!!!…..You have to read labels ALL the time, you’ll get used to it. And cooking only natural foods helps too, like meats, veggies, rice, potatoes. You can also go online. There are many stores, receipe books. Even now some of the major grocery stores have gluten free products. I guess you have to stock up the next  time you shop.

Eating gluten free becomes a way of life and becomes very simple once you can find the resources you need to get the products you need to maintain a healthy gluten free life style.

Hope a little of this helped.

Is it safe to use 1/2 tsp vanilla extract in a recipe calling for gluten-free vanilla?

I’m making gluten-free rice pudding for a man who cannot have gluten, but I’m not sure how allergic he is to it. I didn’t even know vanilla extract had gluten!

McCormick Spices is good about labeling their products so I would check them first. According to their web-site, their pure vanilla extract is gluten-free. If a product contains gluten, they will state it in bold letters.

Since some grocery stores are getting about labeling the products they manufacture, I would check Wegmans or Wal-Marts regular products before I spent extra money on specialty products. I would not just use what you have unless you can confirm it is gluten-free.
