What foods to eat gluten free to gain weight?

Ever since going gluten free I’ve been losing weight and now I look so skinny its not even funny! Now im 5’8 131lbs and want to be 135lbs, what to eat to gain the weight? I can’t drink lactose milk, nuts, cheese, or gluten wheat, help!

You most likely are not eating enough calories, so I would add a snack or two, or if you usually just eat a main course at lunch time, then add a dessert. It’s a pity about the nuts and cheese, though, as these are high in calories.

You can sprinkle sesame seeds onto sweet or savory dishes, and they will add calories. They’re also high in nutrients.

Snack on sunflower seeds.

I am on a wheat/gluten free diet and am looking for some good options for this new way of eating. Any suggestions of things to avoid or products to look for?

I found the very best gluten free bread is by Udi’s.They have muffins and other good products too. Van’s, Pamela’s and Kinnikinnick are all good brands for gluten free food.

I have Celiac Disease(Silly-Yak), a allergy to Gluten. Common gluten is in Grains Wheat, Rye, Barley, Spelt, Malt etc. There are Grains that do not have gluten like Rice, Quinoa, Corn, etc. The cookies you saw were made from a “flour” that was gluten free. There are tons of naturally Gluten Free foods, all Veggies, Fruits, Meats, Fish, Dairy, Eggs in their naturally state are 100% Gluten Free. The complication of eatting when you need to be GF is many of pre-pared/packed foods have gltuen. You just have to stop & think out a cooking process when you eat out. Example a soup may have a thickner or be started with a Roux”(usually wheat flour) so will make you ill. Same with Gravies, sauces of all kinds. Was this helpful or TMI? ;-} Slainté (to your health)

Has anyone tried to make something from a normal recipe using Gluten-free flour?

I thought maybe I could make gluten free foods that taste good if the only thing that has gluten is the flour, I can just replace the flour with gluten-free flour. Has anyone tried this, like for cookie and cake recipes?

Yes, but it doesn’t work in the same way as wheat flour. Gluten is the part that makes flour “gluey” and stretchy. G-free flour (depending what it’s made from) is much more crispy for want of a better word. I find it much more difficult to make pastry with it but still fine for cakes, batters etc. Add a little more liquid, also Xanthum gum helps. Remember it won’t behave like wheat flour. What is the best tasting gluten free bread?

I need to find a really good bread that will hold up good in a sandwitch. One that doesnt taste like cardboard and one that won’t crumble. We’ve tried the gluten free pantry favorite sandwitch bread, I like it and find it to be a good bread but my husband doesn’t like it. I dont care if it’s pre made or if it’s a mix, I’ll take any suggestions. Thank you.

I cant tell u much about mixes bc I dont bake if I can help it! I like the following breads: Kinninnicks Gluten Free Breads (they have different ones, yeast free, tapicoa bread, etc.) I find them to be the most tasty for toast, grilled cheese, etc. I like Glutino’s Raisin bread and cinamon raisin bread for breakfast.

That being said I’ve yet to find a Gluten free sandwich bread taht u can just take out at room temp and make a regular sandwich with. They all basically need to be frozen and then thawed and toasted or grilled. Sorry. I havent found one yet and I’ve looked! Also oftenw hen u bake gluten free stuff from scratch (muffins, etc) you need to refrig them after bc they lack preservatives that keep them fresh.

Can I substitute gluten flour for gluten in a bread recipe?

I have gluten flour on hand, but not gluten. Can I substitute the gluten flour for the gluten and if so, what ratios?

yes, this should be fine. I actually have had the same problem what quintessence! you manly just have to watch i what you are cooking but the time is surprisingly close. I hope this was the answer you where looking for.

I’m fairly new to the world of gluten free. The items to buy in the store are pretty darned expensive. I’m “collecting” a bunch of new flours and ingredients. I’ve bought a couple of cookbooks and taken a book out of the library. I miss real bread and the flavor, especially, of an Italian or French bread. Any ideas? While Ezekiel does make gluten free bread, when I searched under my zip code, it is not sold within 100 miles of me. Hope some of you are luckier than I am.

Yeah, “chipa”, “pao de queijo” or “bolinhos de queijo” (they are similar), are mandioca starch and cheese sort of buiscuits and are reallly good. When my mother makes this everyone really likes them, and most in my family can eat any flour – not just gluten-free – and this are a favourite for most.

BOLINHOS DE QUEIJO (a Brazilian recipe)

Boil: – 1 c. milk – 1/2 c. oil – 1 tsp. salt

After boiling, wait a little – it must be really hot though – and pour over 500 g mandioca starch and mix well with fork or wooden spoon.

Add: – 200 g shredded cheese and/or cut in small cubes – 3 eggs (or 2 big ones)

Mix again. The dough will be soft.

Put some mandioca starch on your hands -so the dough won’t stick to them – and make small balls with your hands.

They sort of puff, and are hollow inside.

The oven should be hot.

Anyone have a recipe for gluten free beer bread?

I just picked up some gluten free beer at the supermarket made by AB. God bless them! Very good stuff. Now I want to try making beer bread with it. Since I’ve been diagnosed with celiac, I can’t use regulour wheat flour. Can anyone help?

Found this recipe and tried it today. It works!

Gluten Free Beer Bread

Combine in a large bowl:

3 cups gluten free flour*

3 tablespoons sugar

3½ teaspoons baking powder

1½ teaspoons xanthan gum

1 teaspoon salt

Add to large bowl and stir well:

2 eggs, lightly beaten

1 gluten free beer (12 oz.)

Preheat oven to 350 degrees. Pour batter into a greased or parchment lined loaf pan. Bake for 50-55 minutes. Yield: one robust loaf

*A combination of gluten-free flours usually gives the best result. Pick up a ready to use flour blend like Bob’s Red Mill or use your favorite all-purpose mix. Keep it basic with a rice flour blend (2 cups brown rice flour, 3/4 cup potato starch, 1/4 cup tapioca starch) or spice it up with some mesquite meal. Great with gluten free oat flour, too.

Sorry sweetie I live in the NOLA area and am gluten free and have yet to find a gluten free king cake or even a mix or recipe to come close. MAAAYBE you could try making your own gluten free cinamon rolls (look in cookbooks, online, etc) and shape them into a king cake, then add your own glaze and sugar crystals. I tell ya, if u find a good recipe, lemme know!! I wish! :)
